I've had a few requests for the recipe for Frog Eye Salad, so here it is...
Frog Eye Salad
1/2 lb. acini di pepe
small can pineapple chunks
small can mandarin oranges
small jar cherries
8 oz. Cool Whip
Cook and drain acini di pepe, drain fruit and save juice.
Sauce Ingredients:
Fruit juice
3/4 cup sugar
2 Tbs flour
dash salt
2 eggs, slightly beaten
Cook sauce until thick
Pour sauce over acini di pepe and mix together. Let sit all day and overnight.
Just before serving add fruit and Cool Whip and mix together.
This recipe is from my sister, PeeJay... she's the only person I know who makes it!
